Easy Lemon Bliss Balls
From a favourite site - Wholefoods Simply
What you need:
1 cup raw cashews
1 cup desiccated coconut
zest of one large lemon
juice of half a lemon
1/2 teaspoon natural vanilla extract
pinch of salt
2 tablespoon maple syrup
1 teaspoon honey (optional)
extra desiccated coconut for rolling in
Method:
Place the ingredients into your processor in the order listed above and blend until the mixture resembles a sticky crumb.
Note – Make sure you don’t over blend the mixture if you are using a high powered processor or you may end up with a butter as opposed to a mixture that you can roll into balls.
Use your hands to shape the mixture into balls.
Roll the balls in the extra coconut and place in the fridge to set.
Eat and Enjoy!
Note: If you really LOVE lemon - then double the zest quantity
Healthy Ferrero Rocher inspired
by Confier (our protein ball mix suppier)
What you need:
1 Confier GF Chocolate Protein Ball Mix
60ml water
Nutella
Crushed nuts (we used peanuts)
Baking paper
Method:
Place baking paper sheet on tray and create little blob of Nutella using spoon. Freeze overnight.
Next day, combine your Confier mix with 60ml water.
Create a Pattie shape using combined Confier mix and place frozen Nutella blob in centre.
Smoosh Confier Mix around the Nutella blob so it is fully covered.
Crush nuts and place in separate bowl.
Place 2 TBS Nutella into bowl and microwave until very runny.
Place the Nutella filled Bliss Ball into melted Nutella and then into crushed nuts.
Repeat and Enjoy!
Jaffa Protein Balls
From the CSIRO Nutrition Plan
What you need:
Zest of 1 Large Orange
Juice of 1 large Orange
20 Pitted Dates - chopped
320g Almonds (processed to almond meal)
50g of Vanilla protein powder of choice
1/4 cup of cocoa powder
extra 1 Table spoon of cocoa powder to dust
2 teas vanilla
Method:
Put the Orange juice and dates into a small saucepan over low heat for a few minutes until mixture starts to simmer.
Remove pan from heat, mash mixture together with a fork then and set aside to cool to room temperature.
In a food processor, blend the almonds (or use almond meal), add the protein powder, 1/4 cup of cocoa and vanilla, orange zest and date mixture and process until well combined
Roll into 16 balls, dust with the reserved cocoa and place in an airtight container.
These will keep in the fridge for up to 2 weeks
